As I have gotten older, I have started craving fancier things like french toast and waffles. I miss the days when an easy bowl of cereal would do the trick. Don’t get me wrong, I still love a good bowl of cereal, but I gotta switch it up once in a while and get creative!When I was coming up with this recipe, I really had a craving for French toast, but realized I had NO bread in my house. I did, however, have waffles in my freezer, so I thought how fun would that be to create a fun twist on French toast, and add a fun and crispy coating to it?
These waffles are crispy, with just the perfect amount of crunchiness to them. The waffles are already great on their own, but the French toast mixture adds that sweet cinnamon kick to them and gives them so much flavor!
This dish can be made ahead of time, and can definitely be made with regular bread, or even challah, which would be incredible!
Our version is gluten and dairy free! We topped ours with fresh berries, peanut butter, and maple syrup, but it would also be great with chocolate, or even some whipped coconut cream!
This dish is perfect for weekend brunch, and the kids will love it, too! They can even help out with dipping the waffles or bread into the milk mixture!
To make this super simple recipe, all you have to do is combine the eggs, almond milk, cinnamon, and vanilla in a bowl.
Dip the waffles or bread into the milk mixture.Coat the waffles in the Corn Flakes mixture.
Cook waffles in pan for a few minutes on each side.
Top with fresh fruit and enjoy!
