We made a pact with each other that we will try to use the grill at least 3-4 times a week. We love grilling because it is SO easy and convenient and you can cook so much at once! Plus, it just tastes like summer any time you use the grill. It also reminds of us summer barbecues and being with family and friends.

Our favorite parts of summer are spending the big holidays like Memorial Day, July 4th, Labor Day, and most importantly, our birthday outdoors with our family and friends by the pool and grilling out.

I will be honest, though. If you’ve seen my salads on snapchat {alexis.belbel}, you’ll know that mine don’t look this pretty. They are pretty much thrown on a plate because I am almost alway in a rush and H A N G R Y! Shocker, right? This salad, though, is so easy to make and requires almost no work if you make the meat ahead of time!

If you haven’t prepared chicken or meat in the crockpot, it is a game changer. All you have to do is literally put the meat in, spices, and water, and you’re done. After 5-6 hours, you have all your protein prepped and ready for the week.

Labor Day Recipe Roundup

Can you believe it is that time of year again?! The time when summer comes to an end (although, summer really isn’t over in Dallas until like November) and everyone is back in school.

Since almost everything in our world revolves around food (duh!), we thought we would do a roundup of our own favorite recipes, along with some other favorites from some other awesome bloggers, that are perfect for a Labor Day BBQ, or just yourself!

Healthy Pepper Steak

So first thing, I have to share this SUPER embarrassing moment that took place a couple of days ago. I know that everyone has had their moments, and trust me, I have had my fair share already. I think this one, though, is pretty high up there on the embarrassing list.

We had been running around all day and the hunger had definitely hit us. We HAD to eat or it would not be a good situation (admit it, you’ve totally been there!) It is not good to be around me when I am hangry. it is B A D!

We were near a Cafe Express and I love their half-roasted chicken so we thought it would be perfect.

Beef Stir-Fry with a Thai Peanut Sauce

We are known to NEVER leave any food behind in our fridge. We refuse to waste any food! Are you all like that?

For some reason it is a major pet peeve of ours! Anyways, we had some leftover peanut butter we had been using for another recipe that we had already taken out of the jar, so we were thinking of what I could make with it. Of course, we could just eat it by itself, but we were in the mood for making something fun and different.

We had some ground beef that we had defrosted, so we decided to make a beef stir-fry and make a peanut sauce with the leftover peanut sauce. We are so glad we didn’t eat that peanut butter before because this turned out DELICIOUS!

Grain-Free Paleo Beef Enchiladas

Even though Cinco De Mayo has already passed, it doesn’t mean you cant still enjoy enchiladas or tacos! We made these delicious grain and gluten free beef enchiladas the other day for Cinco De Mayo, and LOVED them!

We do eat gluten-free products occasionally (like corn tortillas), but since we didn’t have any on hand, we decided to make some homemade paleo tortillas that are SO easy to make! We also made a homemade enchilada sauce that was delicious!

We did not eat ours with cheese, but you could definitely top yours with cheese if you would like to!
