I don’t think we are alone when I say that we have crazy buys mornings. I used to skip breakfast all together when I was in high school and college because I either wasn’t hungry or I just didn’t think I had time to make something. Now, it is my favorite meal of the day. We are at home in El Paso for the week visiting our parents, and of course, that means lots of baking! We have only been here one day so far, and I have already baked two desserts! I am sure I will be baking more the rest of the week, but I wanted to share this super fluffy loaf I made yesterday. I literally just grabbed a few things and threw it together, but it tasted SO good.

Let me start off by saying that we do not celebrate Easter, but we do love a good carrot cake. It seems like carrot cake is the perfect dessert for the springtime. We actually made this carrot cake months ago, but never got around to posting it. I don’t know how I could forget about this one, but I know I will be remaking this on one Sunday!

Okay, I will admit it, I got really burned out from oatmeal. I think it started when I was in college, and literally ate it every.single.day. After a while, I just couldn’t do it anymore. We may be waffle queens at heart, but that doesn’t mean we don’t love a good stack of pancakes once in a while. Okay, maybe more like once a day, followed by waffles. Can you tell we like breakfast food maybe just a little?
I remember being younger, I would look forward to weekends because our mom would make us chocolate chip pancakes and it was such a treat! I remember she would really want to be sleeping in, but typical Sam and I wanted pancakes, and we wanted them now. Oh gosh, I do NOT look forward to that time with my kids. Don’t get me wrong, I can’t wait to have kids of my own, but I really am so selfish at times 😉 I am sure that will change with time when I have someone else to worry about other than myself.

With it almost being a month into the new year, most of us are into our new years resolutions. Of course, mine is always to eat balanced and satisfy my sweet tooth with homemade baked treats that are actually good for me. Not going to lie, it took ALL will power not to eat these as we were making these. You would never guess they were healthy or that they had beets in them! Aren’t these perfect for Valentine’s Day coming up?!
I always think of beets as something that I would add to salads or a side dish, but when we saw that this awesome juice company, Natalie’s Orchid Island Juice Company, had an orange beet juice, we knew we wanted to make a baked treat with them to switch it up!
