In case you missed some of the previous posts, you can check out some of them here and here! Below, you will find videos, several of our workouts from the week, as well as a breakfast, lunch, and dinner recipe that we have tried or are planning on making this week!

As far as cardio goes,we will do anywhere from 30-45 minutes of cardio, usually on the stair master, followed by weight training (each muscle group a different day). Every body is different, and you definitely don’t need to do that much cardio each day, just whatever you feel up to, or feel like you can handle at this time! We used to do ZERO, so just find what works best for you!

We have only been here one day so far, and I have already baked two desserts! I am sure I will be baking more the rest of the week, but I wanted to share this super fluffy loaf I made yesterday. I literally just grabbed a few things and threw it together, but it tasted SO good.

I am not joking, I made it in the morning, and by 4 PM it was gone. I had a little help from my dad and sister finishing it, but we all couldn’t stop eating it. There is something about peanut butter that is just so addicting, you know what I mean? Luckily, this loaf is gluten free and made from a base of coconut flour and peanut butter protein powder, so it’s lower in carbs, and high in protein!

My mom had a huge bag of pears to use, so of course, I knew I had to include them in here, and they were delicious! You could replace them with apples or whatever fruit you want, too.

I love using this brand of coconut flour and this is the peanut protein powder I used, but you could also use vanilla whey and add in peanut butter or peanut four to replace it! I love using this protein powder for baking because it bakes super well and tastes SO good!

Peanut Butter & Jelly Oatmeal - a take on the classic pb&j in breakfast form. I think it started when I was in college, and literally ate it every.single.day. After a while, I just couldn’t do it anymore. Luckily, I think that phase is over, and I am ready to welcome it back into my breakfast schedule;) I mean, you just can’t get tired of oatmeal when it includes creamy peanut butter, crunchy peanuts, and a homemade strawberry jam!

Speaking of PB&J oats, Quaker® Oats is holding a “Bring Your Best Bowl” contest where you will create your “best bowl” recipe for a delicious breakfast using Quaker® Oats and ingredients from Kroger. To enter, go to the national sweepstakes site, and create a bowl that has between 2-5 ingredients. The contest starts now and runs through March. The winner will be announced in November.IMG_0098Besides the fact that oatmeal is packed with fiber, I love that it is so easy and convenient to make. Of course, you can make it more involved by cooking it on the stove top, but who has time for that? The microwave is always what I use. When I was thinking of topping ideas, I wanted something simple and flavorful, but also something that has some texture to it since oatmeal can be kind of bleh. It is not the most visually appealing thing, haha.

We may be waffle queens at heart, but that doesn’t mean we don’t love a good stack of pancakes once in a while. Okay, maybe more like once a day, followed by waffles. Can you tell we like breakfast food maybe just a little?

I remember being younger, I would look forward to weekends because our mom would make us chocolate chip pancakes and it was such a treat! I remember she would really want to be sleeping in, but typical Sam and I wanted pancakes, and we wanted them now. Oh gosh, I do NOT look forward to that time with my kids. Don’t get me wrong, I can’t wait to have kids of my own, but I really am so selfish at times 😉 I am sure that will change with time when I have someone else to worry about other than myself. 

Sometimes, we would also go to our favorite 24/7 restaurant in El Paso, Village Inn. I would always get the chocolate chip pancakes, but I didn’t want just the kids’ size, I wanted the BIG order of them. This girl has always had a huge appetite! When we were in college, we would go to IHOP after our Calculus exams that were at night and I would order the short stack of pancakes AND the bacon and hash browns with it. Oh yeah, and I didn’t leave one scrap behind!
