Happy Saturday, y’all! We baked up these chocolate marshmallow bars last weekend, and not gonna lie, we totally finished them in less than 24 hours. I could definitely go for some right now! As you all may have seen, we are spending the weekend in Austin at the JW Marriott. We have been having the best time, so be sure to follow along on our snapchats! Not only are these bars loaded with chocolate (yum!) and yummy marshmallows, they are also packed with protein AND collagen.
I honestly had NO idea what collagen even was or why it was good for you until I tried this Vital Proteins Marine Collagen. There are TONS of health benefits that I didn’t even know about. It is vital for our body and is the basic building block of skin, hair, and nails.
Something about crumbles just immediately makes me think of July 4th. They remind me of summer barbecues and time outside, which is my favorite! This recipe I actually made FOREVER ago, but never had a chance to share it, but I thought since July 4th is this weekend, what better time to finally share it?
These crumble bars are made with just a few simple ingredients, making them gluten free, grain free, and even dairy free!
The berry topping is made from a homemade chia jam which is loaded with fiber, natural sugars, and a great superfood, chia seeds!
These bars are great on their own, but would also be delicious with some cold vanilla coconut milk ice cream on top!The crust and crumble are made from our favorite base: coconut flour and vanilla protein powder. We love it because it’s lower in carbs, but high in protein and fiber!
These are best stored in your fridge, if they last that long!;)
- 75 grams coconut flour
- 60 grams vanilla protein powder [we used whey protein]
- 6 tbsp unsweetened almond milk
- 4 tbsp unsweetened applesauce
- Stevia to taste [didn't use any]
- 1 cup mixed berries
- 2 tablespoons chia seeds
- sweetener [optional] - we don't use any
- Preheat oven to 350 degrees F.

If there is one thing I ALWAYS tell people, especially my parents, is that you gotta get protein in! I will be the first to say, I usually don’t drink protein shakes regularly. I am kind of weird (no shock there) in the sense that I would rather eat something, rather than drink it! As I have gotten older, I have started craving fancier things like french toast and waffles. I miss the days when an easy bowl of cereal would do the trick.
