Happy Wednesday, y’all! In case you missed the first couple posts of this workout series we started this year, you can check out some of them here and here! Below, you will find videos, several of our workouts from the week, as well as a breakfast, lunch, and dinner recipe that we have tried or are planning on making this week!

As far as cardio goes,we will do anywhere from 30-45 minutes of cardio, usually on the stair master, followed by weight training (each muscle group a different day). Every body is different, and you definitely don’t need to do that much cardio each day, just whatever you feel up to, or feel like you can handle at this time! We used to do ZERO, so just find what works best for you! 

We have been getting a lot of questions as far as what our cardio is, so we decided to put together a great cardio routine for you all to try. We usually will do steady-state, meaning the same level the whole time, but interval training is actually better for you!

We LOVE guacamole and salsa on pretty much anything! We didn’t realize how easy it is to actually make guacamole until we tried this one out. Literally, in a matter of minutes, you can whip up this great dip that is super healthy, and packed with healthy fats!

We partnered with La Vaquita to create this fun recipe for y’all that tastes just like you stepped out of Mexico. Happy Labor Day Weekend! Hope you all are up to something fun or relaxing this weekend. Our parents are coming into town on Sunday for a few days, so we are SO excited! Family time is the best!

Top the cheesecake with the mixed berries and the cruxThe crust is made from coconut flour and protein powder, so it is gluten free, grain free, and packed with protein powder. The cheesecake does have dairy in it, but we are able to eat it in small amounts!

We have a major sweet tooth, as you all know, so healthy desserts are how we cure that!:)

Crust
  1. 60 grams coconut flour
  2. 45 grams vanilla protein powder [we used whey protein]
  3. 5 tbsp unsweetened almond milk
  4. 4 tbsp unsweetened applesauce
  5. Stevia to taste [didn't use any]
Cheesecake Filling
  1. 2 6oz container of yogurt [we used plain]
  2. 2 tbsp coconut flour
  3. 1 egg
  4. 1 cup mixed berries (fresh or frozen)
Instructions
  1. Preheat oven to 350 degrees F.
  2. Grease the sides and bottom of a round springform pan.
  3. To make the crust, combine coconut flour and protein powder in a medium bowl.
  4. Add the almond milk and applesauce.
  5. Combine until a crumbly dough is formed, reserving a little bit for the crumble topping.
  6. Press crust mixture into prepared baking dish evenly.
  7. Bake for 5-7 minutes, or until slightly golden.
  8. While the crust is baking, prepare the cheesecake filling.
  9. To make the filling, combine the yogurt, coconut flour, and egg in a large bowl.
  10. Beat ingredients together until smooth and creamy (we used a hand blender).
  11. Spread the cheesecake filling on top of the crust.
  12. Top the cheesecake with the mixed berries and the crumble topping.
  13. Bake for 30-35 minutes, or until the cheesecake has set and doesn't jiggle.
  14. Allow to cool for at least 2 hours before placing in the fridge.

Ingredients
  1. 2 cups cherry tomatoes, halved
  2. 2 cups cooked corn, fresh or frozen
  3. 1 english cucumber, diced
  4. 1 avocado, halved, pitted, and diced
  5. 1 tbsp lemon juice
  6. 1 tbsp olive oil
  7. 1 tbsp dill, fresh or dried
  8. salt and pepper to taste
  9. red pepper flakes, optional
Instructions
  1. Combine corn, tomatoes, avocado, cucumbers, lemon juice, and olive oil in a large bowl.
  2. Season with dill, salt,and pepper, and toss gently to combine.

Sam’s Club is also a great place to stock up for a healthy Memorial Day. You can get all of your party supplies, as well as shop in bulk for all of your needs! Who wants to have to go to like 20 different places when you are having a bunch of your friends over? We have only been here one day so far, and I have already baked two desserts! I am sure I will be baking more the rest of the week, but I wanted to share this super fluffy loaf I made yesterday. I literally just grabbed a few things and threw it together, but it tasted SO good.

I am not joking, I made it in the morning, and by 4 PM it was gone. I had a little help from my dad and sister finishing it, but we all couldn’t stop eating it. There is something about peanut butter that is just so addicting, you know what I mean? Luckily, this loaf is gluten free and made from a base of coconut flour and peanut butter protein powder, so it’s lower in carbs, and high in protein!

My mom had a huge bag of pears to use, so of course, I knew I had to include them in here, and they were delicious! You could replace them with apples or whatever fruit you want, too.

I love using this brand of coconut flour and this is the peanut protein powder I used, but you could also use vanilla whey and add in peanut butter or peanut four to replace it! I love using this protein powder for baking because it bakes super well and tastes SO good!
