I hadn’t made a loaf in forever, so this was my perfect excuse! As I have mentioned before, I love using a combination of coconut flour + protein powder in baking because it makes it lower carb and higher in protein! Perfect for snacking;)

Okay, I will admit that I originally made this carrot cake loaf using a new vegan protein powder that had been sent to us. I am usually wary of vegan protein powders because I am SO used to the way whey tastes and bakes, that it is hard for me to try anything else. I really don’t like the way pea protein tastes for some reason, and that is what most vegan protein powders seem to use, unfortunately!

I know that we have all been there before, and trust me, I was definitely one of those people who would have all intentions of sticking to eating more wholesome foods and working out regularly until I was a couple of months in and decided that eating mac n’ cheese, pizza, and froyo with EVERY topping possible sounded much better than the boring food I thought was better for me.

Grain Free Pumpkin Pie

Happy Thanksgiving!

What would today be without all things pumpkin, especially pumpkin pie?! I have to say this is literally the holiday that I look forward to this holiday more than anything else simply because of the food. Okay, and being with my family, but the food is a close second.

My favorite things to eat are not just sweet things. I LOVE turkey and cranberry sauce, and of course, sweet potato with marshmallows. I do, however, have a M A J O R sweet tooth, so eating pies, especially pumpkin pie is my favorite part of the meal. Do I wait until Thanksgiving to have this? Absolutely not. I mean, they sell pumpkin all year long, so why not make it whenever the craving hits?

Our plans for Thanksgiving include baking up a storm, chowing down on the early side (like 4pm), and watching lots and lots of football. Oh, and getting ready for online shopping tomorrow!

Mediterranean Mezza Plate with Homemade Hummus

Mediterranean Mezza Plate- veggie crudites, homemade hummus, and crisp Paleo crackers |adoubledose.comIt is no surprise we both have quite the obsession with all things Mediterranean. We usually are way too lazy to make our own hummus, but we had a can of chickpeas sitting in our pantry for the longest time, so we decided to make some. It literally could not have been easier, and it is SO creamy. 

We will definitely be having more with our grilled chicken and salads. It would also be delicious on top of some toasted bread or pita! We had ours with our favorite Jilz Crackers which are gluten free, paleo, and vegan and SO good!
