We aren't super religious or anything, but we always like to spend time with our family when it is a holiday. It looks like it is going to be a cloudy week in Dallas, so we are hoping that the forecast is wrong, and the sun decides to make an appearance!

This week, we are sharing an arm workout that just requires a set of dumbbells, so you could totally do this one at home!

Southwestern Chopped Salad with Crockpot Beef - this mexican-inspired salad is loaded with protein, fresh veggies, and fiber | adoubledose.comBesides Mediterranean food, I could eat a salad every single day. I will be honest, though. If you’ve seen my salads on snapchat {alexis.belbel}, you’ll know that mine don’t look this pretty. They are pretty much thrown on a plate because I am almost alway in a rush and H A N G R Y! Shocker, right? This salad, though, is so easy to make and requires almost no work if you make the meat ahead of time!

If you haven’t prepared chicken or meat in the crockpot, it is a game changer. All you have to do is literally put the meat in, spices, and water, and you’re done. After 5-6 hours, you have all your protein prepped and ready for the week. I used to make chicken in there every week for all of my meals for work when I worked my corporate job at EY and it was so easy. Of course, I got so sick of it, but I can always go for meat! You could also add fresh lime juice or salsa to bring out the flavor even more.

For the greens, I used Organicgirl’s Sweet Pea mix, which is a blend of baby greens and sweet pea shoots. The sweet pea adds a little bit of sweetness to it, but not overwhelming that it’s weird to combine with vegetables, if that makes sense?

Well, actually let me rephrase that: I get tired of salads if they are the same old-same old. BUT this salad will not leave you feeling bored. 

It seems like since it is the new year, everyone is on the healthy train (which I think is GREAT), however, I think a lot of people have a misconception that salads are always healthy, and that is definitely not the case! I alway try to stick to healthy and light dressings like balsamic vinegar and olive oil and stay away from creamy dressings. I also love going for the darker greens, using fresh veggies, and staying away from candied nuts, fruits, or any added sugars. 

This salad uses my FAVE organicgirl super greens, which are the bomb, by the way! I love all of their salad mixes so much. This one mix in particular combines baby red chard, baby tat soi, baby spinach, baby green swiss chard, and baby arugula. I am a big fan of all things arugula. So good!

Roasted Autumn Salad with Kabocha and Lemon Tahini Dressing

It may be October, but Dallas has not gotten the memo. We are pretending it’s fall this week with this fall-inspired salad. I am not joking when I say we eat a salad at least once a day. I tend to put the same things in my salad each time I make it so it can get a little boring. I just usually will use whatever I have in the fridge which is usually tomatoes, bell pepper, cucumber, onions, and carrots and some grilled or shredded chicken

I LOVE cheese, but cheese does not love me so much, so unfortunately, I don’t usually get to add that into my salads. The other day, actually, we were at the mall and we grabbed a salad from those create-your-own salad places. Almost every time we are in the line there, we see someone getting the most unhealthy salad you can imagine. I am definitely not judging them because I think everyone should order what they want to order and enjoy eating, but I am thinking that by ordering a salad, they probably think they’re having a super healthy meal, which is the total opposite of what they’re actually eating.

Labor Day Recipe Roundup

Can you believe it is that time of year again?! The time when summer comes to an end (although, summer really isn’t over in Dallas until like November) and everyone is back in school.
