We are getting back into a routine since we were gone for a few days visiting our parents in El Paso. We plan on doing a recap of our time there (hopefully this week) since we have some outfits to share and also some of our eats. 

We got back in Saturday night, so of course, our first stop was dinner because we were hungry (and food is always on our minds, #duh!)

Can you guess where we went? I know it’s a tough one.. Mediterranean. We chowed down (as always) and consumed way too much food and told myself that I would not eat again. Of course, a few hours later, I was ready to eat and my appetite was back in full swing.

Spicy Mexican Sautéed Fish

Happy Monday! We hope y’all had a great weekend! I felt like I was running around all weekend had no time to relax and decompress. Do you all ever have those kinds of weekends? Sometimes you just need some time to relax, and those are the times you don’t have time to do it, right?!

Fortunately, we are going on a family vacation Friday, so I CAN’T wait! It will be much-needed and (hopefully) I will not work while we are gone, but that is doubtful!

Anyways, we get asked a lot if we ever get tired of eating the same foods over and over again. Well, yes and no. There are some foods we never get tired of: waffles and pancakes, but yes, we do get tired of eating salads and the same kinds of foods over and over again.

That is why we always are getting creative with what we have prepped or available in our kitchen or fridge. It is always easier to just throw something on a plate and eat a plain meal, but you will enjoy your food way more if you try to switch it up or get those creative juices flowing! Eating healthy doesn’t have to be hard. If we are ever craving something that is not on the healthier side, we either have it or enjoy it OR we try to make a healthier version of it!

Balsamic Baked Copper River Salmon

We had been hearing all about how awesome Copper River Salmon is, so when we saw it on sale at Sprouts, we had to try it!

You may be wondering what’s the big deal with Copper River Salmon? Well, the salmon that originate in those waters are challenged by its length and strong rapids. Therfore, this type of salmon are robust and have a healthy store of natural oils and body fat. These qualities make the salmon not only super tasty, but loaded with tons of Omega-3 oils!

We bought a good amount, so we are thrilled that we get delicious leftovers (that are great for us, too!)
